Our Story

It started in a one-car garage.

In 2016, our founder Marisol Reyes bought a secondhand 1kg sample roaster and wedged it into the garage between a lawnmower and a stack of bicycle tires. She roasted on weekends, gave bags to neighbors, and waited for honest feedback. Most of it was honest.

What kept us going wasn't the equipment — it was the coffee itself, and the people who grow it. Over eight years we've built direct relationships with six farms across Ethiopia, Colombia, and Guatemala, visiting each at harvest and paying well above the commodity price. We know the producers by name, and they know what we're after.

One thing we refused to compromise: nothing sits on a shelf. We roast every order the day it ships — never a warehouse, never a guess at freshness. The garage is now a proper roastery, but the rule that started there hasn't moved an inch.

How it's made

From green coffee to your door in days.

No middle warehouse, no mystery dates. Here's exactly what happens between the harvest and your first cup.

01

Sourced direct

Green coffee bought straight from six farms we visit every harvest — no brokers, no commodity lots.

02

Roasted to order

Small batches on a 15kg drum — each profile dialed by hand, roasted only after your order lands.

03

Rested & valve-bagged

Beans rest to settle, then go into a one-way-valve bag that lets CO₂ out and keeps oxygen from getting in.

04

Shipped in 48 hours

Every bag leaves within 48 hours of roasting, with the roast date hand-stamped on the front.

Daybreak Roastery

The roast date is on the bag, not hidden in a code.

Other roasters print a cryptic lot number. We hand-stamp the actual day your coffee was roasted, right on the front of the bag — so you always know exactly how fresh your cup is. Coffee tastes best within four weeks of that date; we make sure you get all four.

"The roast date stamped on the bag said three days ago. You can taste it — Morning Glory bloomed like crazy in my V60. Genuinely the brightest coffee I've had at home."

"House & Home has been my subscription for eight months. It's the one bag the whole family agrees on — my partner takes it black, I take it with oat milk. Never a bad cup."

"I usually find decaf flat and papery. Off the Clock actually tastes like coffee — caramel and a little cherry. My evening cup finally isn't a compromise."

"Last Light is a proper dark roast that didn't go bitter or ashy. Rich, a bit of molasses, perfect for my morning espresso. Order to door in three days, every time."

FAQ

Good questions, honest answers.

Still wondering about something? Email the roastery at [email protected] — a real person answers.

Whole bean or ground?
Whole bean, always, if you can. Coffee starts losing aroma within minutes of grinding, so a burr grinder at home is the single biggest upgrade to your cup. That said, we'll grind any bag for free at checkout — choose espresso, pour-over, or French press, and we'll dial it to the right coarseness for your method.
How fresh is it — when was it roasted?
Every order is roasted to order — we don't roast until you've bought. Your bag ships within 48 hours of roasting, and the exact roast date is hand-stamped on the front, not buried in a lot code. For the best flavor, brew within four weeks of that date; the coffee will keep well past it, just at its peak in that first month.
How should I store it?
Keep the bag sealed somewhere cool, dark, and dry — a cupboard is perfect. The one-way valve lets roasting gases escape while keeping oxygen out, so the bag itself is good storage. Skip the fridge and freezer: they introduce moisture and odors. Just buy what you'll drink in about a month and store it on the counter.
Can I pause or skip a subscription?
Anytime, in two clicks, no email required. From your subscription page you can skip the next delivery, pause for as long as you like, change your roast or grind, adjust the cadence, or cancel outright. There's no contract and no fee — if your shelf is still full, just push the date.
Do you ship internationally?
Yes — we ship to Canada, the UK, the EU, and Australia, with rates calculated at checkout. International parcels still leave within 48 hours of roasting, though customs can add a few days in transit. Domestic US orders over $40 ship free; subscriptions ship free everywhere we deliver.
